(20 minute) Healthy Alternative Pancakes

If there’s one thing I can’t avoid eating in the breakfast selection, I would hands-down say pancakes or waffles. Two staple items in my childhood memories because those were the mornings I woke up smelling sweet cinnamon, blueberries, apples…anything that my father could think of he would always try new ideas. That’s where my love for experimenting with different ideas and tastes stems from because my father would never fail to amaze me with what he could conjure up. Now, being 20 years old and trying to take a healthier path in life, the options are endless that fuel your body with essential vitamins and nutrients that don’t have to bland your tastebuds.

Banana Oat Pancakes

Ingredients:

  • 1 ripe Banana
  • 2 cups Rolled Oats
  • 1 tsp Baking Powder
  • 1 tbsp Cinnamon
  • 1 tsp Pure Vanilla Extract
  • 1/8 tsp Salt
  • 1 cup Almond Milk/Coconut Milk Blend Unsweetened

The easiest part about this recipe is that you simply put the ingredients together and blend them! So simple n easy for those who have kids, or even if you don’t and your starting your day late now all you have to do is make them to the size you want, give them a few fancy flips (LOL), and voila, you’ve made the healthiest, tastiest pancakes in under 20 minutes!

Almond Blueberry Pancakes

  • Gluten Free
  • Paleo

Ingredients:

  • 1 Banana
  • 3/4 cups Blueberries
  • 4 Eggs
  • 1 Cup Almond Flour
  • 1 tsp Baking Powder
  • 1/4 cup Silk Vanilla Almond Creamer

Now these pancakes require a little more work but you’ll be filled for hours in case your one of those people that always end up snacking before lunch (I know I am!) so mix your wet and dry ingredients in separate bowls, have your mixer on stand-by so you can mix all the ingredients together and then make to your desired size.

Coconut Pancakes

  • Gluten Free
  • Paleo
  • Keto

Ingredients:

  • 1 Banana
  • 2 Eggs (Separated)
  • 1/2 Cup Coconut Milk
  • 1 tsp Baking Powder
  • 1 Cup Coconut Flour

Sift together coconut flour and baking powder in large bowl. Separate eggs, putting whites into an electric mixer. Mix coconut milk and egg yolks together and add to dry ingredients. Whip egg whites until stiff peaks form and fold into the mixture to make them nice n fluffy, then create to your desired size.

Plain Fluffy Pancakes

  • Vegan
  • Gluten Free

Ingredients:

  • 1/2 cup Almond Milk
  • 1/2 cup unsweetened, Organic Applesauce
  • 2 tsp Lemon Juice
  • 2 tbsp Agave
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 tsp Vanilla Extract

Run of the Mill plain pancakes so you can let your own imagination create whatever your buds are tingling for, add 1/3 cup of your favourite fruit, add some cinnamon, or simply leave them plain! That’s the beauty of base pancakes because now it’s your turn to show me what YOU can create!

Skinny Chocolate Coconut Pancakes

  • Gluten Free

Ingredients:

  • 1/2 cup Coconut Milk
  • 2 tbsp Agave
  • 1 tsp Vanilla Extract
  • 1 cup Coconut Flour
  •  1/4 tsp Salt
  • 3 tbsp Cocoa Powder
  • 1/2 tsp Baking powder

These might be my favourite for when I have a sweet tooth because I don’t have the slightest shred of guilt after I eat them! Sometimes if your feeling risky, maybe even sneak a few chocolate chips in there or extra coconut flakes.
