Creamy Avocado Pasta

Now this is an ideal 15 minute power lunch for work! I honestly never enjoyed avocados myself taste or texture wise but in this dish, the creamy, spice loaded sauce is perfect.

  • 4 Avocados
  • 1 fresh Lemon
  • 8 Garlic Cloves
  • 2 tsp Kosher Salt
  • 1/4 Extra-virgin Olive Oil
  • 24 oz Whole Wheat Pasta
  • 1 tsp Paprika
  • 1 cup Parsley
  • Pepper and/or Chili Flakes to taste


Blend lemon juice, garlic cloves, salt, paprika, parsley, and olive oil together until smooth and creamy. Add pepper and/or chili flakes to taste and set aside. In a large pot, bring salted water to a boil and cook the pasta until al dente. Drain pasta in strainer and lightly drizzle with olive oil to avoid sticking and pour desired amount of sauce onto plate.
