Author’s Favourite

Out of all the delicious, colourful, vitamin packed foods there are out there, my personal favourite has always been Chia Pudding. Feeling like having a guilt-free dessert/snack, or maybe a quick breakfast? This easy recipe can be altered to your desire in every way AND takes only 10 minutes to prepare!

Ingredients

  • 3 tbsp Chia seeds
  • 1 cup Almond Milk
  • 1 tbsp Honey
  • 1 Mango
  • 1 1/2 cup Strawberries
  • Shredded Coconut
  • 1 cup Pineapple

Directions

First put the chia seeds, almond milk and honey in a blender. (If this was an overnight chia pudding recipe you would not have to blend them but personally, I like it better this way. When done overnight they must sit in a tightly closed jar with the almond milk and honey and become a jelly like texture.) Blend the ingredients together and put the mixture in the fridge for about as long as it takes for you to cut up your strawberries, mango and pineapple. When done, layer your pudding to make sure you get fruit and pudding with every delicious bite then sprinkle your coconut shavings over top and enjoy.

Note- Keep in mind, this is a recipe for a Tropical Chia Pudding. I will post other ideas for different taste buds because this is such an adjustable recipe. For instance, are you a chocolate lover? Simply add 1 tbsp of coca powder and keep the fruit or don’t! Add banana, kiwi, dragonfruit…whatever you desire. Chia seeds are immensely packed with Omega 3 fatty acids, rich in antioxidants and provide fibre, iron and calcium. All huge reasons why this dish can be served at anytime of the day especially on how you wish to prepare it.
